General Tso Chicken

Ingredients

  • 2 Chicken legs
  • 1 Egg
  • 50 grams cornstarch
  • 5 grams ginger, chopped
  • 20 grams garlic, chopped
  • 2 dried pepper
  • 2 teaspoon white sugar
  • 1 teaspoon salt
  • 1 teaspoon light soy sauce
  • 2 teaspoon vinegar
  • 1 teaspoon Sesame oil
  • 1 teaspoon chili oil
  • 2 teaspoon cooking wine
  • appropriate peanut oil

Directions

  1. Cut the chicken legs into small sections. Add one egg and mix them evenly.
  2. Add 1/2 teapsoon salt and 1 teaspoon cooking wine.
  3. Add 40 grams cornstarch.
  4. Mix all the ingredients with the chicken legs evenly using your hand.
  5. Now we start to make the sauce. Get another small bowl then add 1/2 teapsoon salt and 2 teaspoon white sugar.
  6. Add vinegar, light soy sauce and 1 teaspoon cooking wine to the bowl as well.
  7. In this step, we need to make water starch first. Just get another bowl with a few water and add 10 gram cornstarch in it. At last, pour the water starch in the sauce too.
  8. The last step of making the sauce is easy. Just add the chopped garlic and ginger in it.
  9. Add appropriate peanut oil in the wok. Turn your stove to a high temperature. When the oil gets medium hot, add the chicken legs in it.
  10. To fry the chicken legs correctly. You need to use medium hot oil for frying. After make sure the chicken legs are cooked, then use a higher heat to fry until the surface of the chicken legs change to golden. Then transfer them out.
  11. Left a few oil in the wok. Turn stove to a medium temperature. Add died pepper and stir until fragrant. Then add fried chicken legs.
  12. Add the sauce we made before. Stir them rapidly using a high fire.
  13. After stir for about 1~2 minutes, add sesame oil.
  14. At last, add chili oil. Stir for seconds then serve immediately.
