Hot and Sour Fried Pork

  • 500 g pork tenderloin
  • 2 teaspoon tomato paste
  • 3 teaspoon starch
  • 1 tablespoon white sugar
  • 1 teaspoon white vinegar
  • 2 teaspoon salt
  • 2 teapsoon cooking wine
  • 5 g chopped spring onions
  • 5 g sliced ginger
  • 10 g chopped garlic
  • 1 Carrot
  • 1 egg white
  • A few sesame
  • 250 ml peanut oil


  1. Prepare all the ingredients.
  2. Wash the pork tenderloin and cut it into slice. Gather it into a bowl and add salt and cooking wine. Mix them evenly. Pickled for 15 minutes.
  3. Cut the spring onions, carrot, ginger into slice.
  4. After 15 minutes, add starch and egg white into the bowl. Mix them with the pork evenly.
  5. Add enough peanut oil into the pan, turn the stove to a high temperature. When the oil are heated to medium hot, then turn lower heat. Meanwhile, add the sliced pork one by one. When the meat float, you should take it out and put them into a bowl.
  6. After you cooked every sliced pork, then make the oil to 80% hot. Put the pork one by one into the pan again. Fired for about 30 seconds, make sure that surface of every pork change to gold yellow.
  7. Left a few oil in the pan, add ginger, garlic and spring onions. Stir them until fragrant. Then add tomato paste and white sugar. Continue to stir until the sauce thickens.
  8. Add carrot and pork into the pan. Stir-fry them for just a few minutes and serve it immediately. At last, sprinkle with sesame.
