River Snail Stuffed with Meat

Ingredients

  • 12 River snails
  • 75 g Pork
  • 2 tablespoon peanut oil
  • 1 teaspoon White pepper
  • 1 tablespoon Broad bean paste
  • 4 teaspoon Salt
  • 4 teaspoon light soy sauce
  • 2 teaspoon Soy sauce
  • 2 teaspoon White sugar
  • 3 teaspoon Sesame oil
  • 2 spring onions
  • 1 tablespoon cooking wine
  • 1 Egg white
  • 2 cloves garlic
  • 4 sliced ginger

Directions

  1. Clean the river snails under the water. (generally speaking, the snails have been cut the last part of the its body when you buy it. )
  2. Pour some water into a pot. And put the river snails, sliced ginger, spring onion into the pot. Turn your stove to a high temperature. After the water is boiling, then turn to a lower heat and cook for 5 minutes.
  3. Get the snails out and cool them down using the cold water.
  4. Remove the snail lid and get the snail meat out using a toothpick. Don’t forget to remove the black-grey part of the snail meat.
  5. Clean the snail meat, snail lids and shell.
  6. Mince the snail meat and pork.
  7. Put the chopped snail meant and pork in a bowl.
  8. Add chopped ginger and spring onion.
  9. Add 1/2 tablespoon cooking wine, 2 teaspoon salt, 2 teaspoon light soy sauce, white pepper, egg white and 1 teaspoon sesame oil.
  10. Mix all of them evenly.
  11. Get a shell of snail and stuff the meat mixture into it.
  12. Cover with its lid.
  13. Pour peanut oil in a wok, open a high heat. When it heats to 60% hot, add chopped ginger and garlic.
  14. Put snails in the wok as well. Add 1/2 tablespoon cooking wine, 2 teaspoon salt, 2 teaspoon light soy sauce, soy sauce. Stir them for about 30 seconds. Then add some water, broad bean paste and white sugar. Keep cooking until the water boiled and thickened.
  15. Add 1 teaspoon sesame oil before finish. Then serve immediately.
