Steamed Chicken with Chili Sauce

Ingredients

  • 4 Chicken Legs
  • 2 Cup peanut oil
  • 30 Grains of Chinese prickly ash
  • 4 sliced ginger
  • 4 spring onions
  • 2 teaspoon Chinese prickly ash powder
  • 50 g fried peanut
  • Some Coriander
  • 1 teaspoon salt
  • 3 tablespoon vinegar
  • A half cucumber
  • 2 tablespoon light soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Cooked white sesame seeds
  • 1 medium bowl of ice water
  • 100 g Dried chili

Directions

  1. Put the ginger, spring onion and 20 grains of Chinese prickly ash into a pot. And add some water.
  2. Put the chicken legs into the pot as well. Add 1 teaspoon peanut oil for a more delicate taste. Turn your stove to a high temperature.
  3. When the water is boiling, the turn to a medium heat. Cook for 8 minutes then turn off the fire and steam for 15 minutes.
  4. After 15 minutes, lift the lid and use chopsticks to poke into the chicken. If there is no blood oozing, you can start next step.
  5. Take the chicken legs out and put them into a bowl with ice water.
  6. Cut the dried chill into small sections. Bake in preheated oven at 100C/ 212F for 10-12 minutes. When it finished, wait until  it cool down. Then get the chili seeds from the chill using scissors.
  7. Put the dried chill into a blender. After mash them up, gather them in a bowl and put the Chinese prickly ash powder and chili seeds in the bowl as well.
  8. Add 2 cup oil into the pot.
  9. Add 10 grains of Chinese prickly ash into the pot. Turn your stove to a low temperature. Until you see smoke, then turn off fire.
  10. Pour part of hot oil into the bowl with the mixture of Chinese prickly ash powder and dried chili you made in step 7. We call this sauce as chili oil.
  11. Add salt and cooked white sesame seeds.
  12. Get an another bowl. Add vinegar, light soy sauce and sesame oil. Mix them evenly.
  13. Add 2 teaspoon chill oil into the bowl as well.
  14. Put the fried peanut in a plate.
  15. Pour a half of the sauce you made in step 12~13 in the bowl with peanut. For more tasty, let it soak for a few minutes.
  16. Put the chicken legs above the peanut. Pour the left sauce over the chicken legs. At last you can add some cucumber and coriander for better appearance.
